Korean Beef Bowls
Ingredients:
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 pound ground beef
- Kimchi (can easily be purchased at most grocery stores)
Korean Beef Sauce Mix
- ¼ cup brown sugar, packed
- ¼ cup gluten free soy sauce
- 1 tablespoon freshly grated ginger
- 2 teaspoons sesame oil
- ½ teaspoon Sriracha, or more to taste
Sriracha Mayonnaise
- ¼ cup mayonnaise
- 1 tablespoon Sriracha
- 2 teaspoons freshly squeezed lime juice
In each Bowl
- 1 cup rice
- Optional, but recommended:
- 1 ½ cups shredded purple cabbage
- 1 avocado, halved, peeled, seeded and thinly sliced
- 2 green onions, thinly sliced
- ¼ teaspoon sesame seeds
Instructions:
For the Sauce: In a small bowl, whisk together brown sugar, gluten free soy sauce, ginger, sesame oil and Sriracha.
Heat olive oil in a large skillet over medium high heat. Brown ground beef until browned, about 3-5 minutes. Be sure to drain any excess fat. Add garlic and cook, stirring constantly, until fragrant, about 1 minute. Stir in soy sauce mixture until well combined, allowing to simmer until heated through, about 2 minutes; set aside.
Assemble the Sriracha Mayonnaise: In a small bowl, whisk together mayonnaise, Sriracha and lime juice; set aside.
Assemble the Bowls: Cook rice according to package instructions. Divide into bowls. Top with ground beef mixture, kimchi, cabbage and avocado, drizzled with Sriracha mayonnaise and garnished with green onions and sesame seeds, if desired.
